Let’s Celebrate National Ice Cream Day


National Ice Cream Day is July 16! Enjoy these two ice cream recipes shared by readers.

Vanilla Ice Cream Recipe #1

1 can Eagle Brand condensed milk

1 12-oz. can evaporated milk

1 cup sugar

1 pint of half and half

1 pint of whipping cream (heavy cream)

1 box of Jello instant vanilla pudding mix

1 teaspoon vanilla

Milk as needed

Use a mixer or blender to mix ingredients as follows:

1. Mix Eagle Brand condensed milk, evaporated milk and sugar. Blend well and pour into ice cream freezer.

2. Mix half and half, whipping cream and flavoring and pour one-half into ice cream freezer.

3. Mix the instant pudding and add remainder of half and half/cream mixture and pour into the ice cream freezer.

4. Finish filling the ice cream freezer to the “fill line” with milk.

5. Insert dasher inside freezer container.

6. Alternate layers of ice and rock salt around the freezer to the top, insert motor on top and let run until the motor stops.

7. Carefully pull the dasher out of the container, put lid on top, and cover with a towel to let ice cream set for a few minutes.

8. Serve and enjoy!

Vanilla Ice Cream Recipe #2

5 eggs

2 12-oz. cans evaporated milk

½ pint whipping (heavy) cream

1 14-oz. can sweetened condensed milk

1-1/2 cups sugar

1 teaspoon vanilla

Approx. 4 cups whole milk

1. In large bowl, beat together eggs, evaporated milk, cream, condensed milk, sugar and vanilla with electric mixer.

2. Pour into freezer canister of ice cream maker and add enough milk to bring mixture to fill line.

3. Freeze according to manufacturer’s directions – or see steps 5 – 8 above.

Note: This recipe contains raw eggs. Please use only fresh eggs for this recipe.
